The addition of wine yeast Starmerella bacillaris to grape skin surface influences must fermentation and glycerol production

چکیده

Starmerella bacillaris is a non-Saccharomyces yeast recently proposed for grape fermentation in association with Saccharomyces cerevisiae. Due to its high glycerol and moderate volatile acidity production this can contribute improving wine quality. Some strains have been demonstrated exhibit antifungal activity against grey mould on grape, which caused by Botrytis cinerea. The simultaneous presence of these traits S. great interest. Indeed, be potentially used as biocontrol agent vineyards. Research the ability survive or, even grow surface grapes starting point evaluatation potential use preliminary results our study showed that when applied under laboratory condictions, inoculum sized developed lasted at least 6 days concentrations. In addition, it positively influenced process producing concentrations (average value 4.89 ± 0.47 g/L). Interestingly, positive effect quality was also observed size 10 times higher or lower than reference concentration. When sprayed vines vineyard present skin after harvest, cells start alcoholic fermentation.

Fungal diversity in grape must and wine fermentation assessed by massive sequencing, quantitative PCR and DGGE

The diversity of fungi in grape must and during wine fermentation was investigated in this study by culture-dependent and culture-independent techniques. Carignan and Grenache grapes were harvested from three vineyards in the Priorat region (Spain) in 2012, and nine samples were selected from the grape must after crushing and during wine fermentation. From culture-dependent techniques, 362 isol...

Relationship between the sterol content of yeast cells and their fermentation activity in grape must.

In grape must of high sugar concentration, yeast growth, the viability rate of "resting" yeast cells, and fermentation activity were stimulated under certain conditions of aeration and temperature. This stimulation might be interpreted as being a result of the yeast cell sterol content. The addition of certain sterols to the fermenting medium was able to increase this sterol content. According ...

Pre-fermentation addition of grape tannin increases the varietal thiols content in wine.

The recent finding that grape tannin may contain significant amount of S-glutathionylated (GSH-3MH) and S-cysteinylated (Cys-3MH) precursors of the varietal thiols 3-mercapto-1-hexanol and 3-mercaptohexyl acetate, characteristic of Sauvignon blanc wines, offers new opportunities for enhancing the tropical aroma in fermented beverages. In this study this new hypothesis was investigated: Müller T...

Study of Ageing and Production of Wine from Grape fruit by Fermentation process

Fermentation biotechnology is an important industrial process for the production of alcoholic beverages including wine. However, ageing of wine is always an important issue during production. In present study a attempt has made to produce wine by fermentation process along with the assesment of ageing of wine. In this experiment Grape fruit (jufeng) was used as a raw material and fermentation p...

Associations among Wine Grape Microbiome, Metabolome, and Fermentation Behavior Suggest Microbial Contribution to Regional Wine Characteristics

UNLABELLED Regionally distinct wine characteristics (terroir) are an important aspect of wine production and consumer appreciation. Microbial activity is an integral part of wine production, and grape and wine microbiota present regionally defined patterns associated with vineyard and climatic conditions, but the degree to which these microbial patterns associate with the chemical composition o...
